Black Bean Veggie Soup



This recipe was handed down to me when I was in college from my dear friend and mentor, Michelle. This is one of those meals that never fails to taste delicious, and it only takes about 45 minutes to put together. 

I posted the recipe for this on my menu card the other day, but here it is again on a printable recipe card.

That recipe is great by itself, but here is how I like to serve it up:

1) Place some broken tortilla chips in a bowl (I love to keep blue corn chips around the house)


2) Then pour the soup over the chips


3) Add some shredded cheese on top.


4) Finally, top if off with a dollop of sour cream
