Tasty Tuesday {Low Cal Baked Potato Soup}

Tater soup.

I found this recipe on Pinterest (do I sound like a broken record or what?) and I needed to make it.


Click here to see the original recipe. I substituted green onions for chives and I also used turkey bacon to make it even more low calorie.

Ingredients
4 small Russet potatoes
1 small head of cauliflower
1 1/2 c. fat free chicken broth
1 1/2 c. almond milk (or any fat free milk)
1/2 c fat free sour cream
salt & pepper to taste
4 slices of turkey bacon cooked and chopped
1/2 cup shredded cheddar cheese
3 scallions, diced

How-To:
1. Heat the potatoes in the microwave (poke them a few times with a fork first) for 5 minutes, let them cool, then peel them and cut them into 1 inch chunks
2. Steam the cauliflower in water in a covered large sauce pan
3. Drain the water from the cauliflower and return them to the pan on medium heat
4. Pour in the milk and chicken stock, salt & pepper then add the potatoes and bring to a boil
5. Scoop the soup mixture into a blender (you might need to do this in two sets...the top of my blender popped off a bit and soup went splatter!) and blend until smooth
6. Return to the pan and stir in the sour cream, cook for another 5 to 10 minutes
7. Serve with the turkey bacon, cheese and scallions

Here's What's Cookin {No. 3}

Have you ever planned out a weekly menu? Once you start, it will totally change your life. Okay, that may be an exaggeration, but seriously...it's a game changer. It takes some time, and you have to be willing to stick to it to save money (you don't want to end up wasting food if you change your mind last minute), but it takes away so much stress!

Last week I kind of over planned. By a lot. But it worked out rather wonderfully.

Forrest made dinner on Monday night, and on Tuesday I baked a Chicken & Broccoli Casserole which took us through Thursday night. Thursday I was itching to bake something so I made molasses cookies. I was feeling it in the kitchen, so I went ahead and made the curry I had planned on making that night anyway. Forrest surprised me with a date night Friday evening, so we enjoyed the curry Saturday and Sunday instead. So "Whatever happened to the Sweet Potato & Ground Turkey Shepard's Pie?" you ask...well I am making it tomorrow night. So here is the menu I have planed to take us through the week of 1.23 - 1.30:

Monday / Tuesday:

Breakfast:
I'm sticking with the cocoa, peanut butter and banana smoothies and hard boiled eggs (1 whole & 1 w/out the yolk).

Morning Snack:
1 grapefruit

Lunch:
I'm going to simplify a bit this week and take leftovers.

Pre-Workout Snack:
1 chocolate crunch rice cake w/ 1 tbsp peanut butter
 

Grocery List:
rosemary
2 lbs ground chicken or turkey
1 can black beans
frozen corn
1 package spinach tortillas
2 packages shredded cheddar
scallions
1 small head of cauliflower
1 box of chicken broth
1 package turkey bacon

Substitutions:
Lasagna -- yellow onion instead of red
Soup -- scallions for chives, almond milk for low-fat milk

Already in my kitchen:
sweet potatoes
1 lb ground turkey
Greek yogurt
salt, pepper, olive oil
onions
celery
1 bag frozen mixed veggies
russet potatoes
fat free sour cream
chili powder, cumin
taco sauce

Snack Attack

I'm a huge snacker. I snack throughout the day when I'm hungry (mid-morning, post lunch, pre-workout, post-workout...and admittedly after dinner). Most of the time I am a really healthy snacker...but every now and then I'll reach for something a little sinful. Today I want to share with you some snacks that you can eat and don't have to feel guilty about. period.

I love keeping these in the pantry because that way I plan my snacks and don't get the sudden urge to stop by MacDonald's on my way home for a caramel sundae (ps...have I ever mentioned these $1-and-change snacks are my guilty pleasure?). I pack several snacks in my lunch everyday to last me until I get home. Sometimes when I am out running errands, I'll throw one or two of these snack ideas into my purse to have in case I get hungry on the road.

So here they are in no particular order...the Snack Stars of the Casita Cory Pantry (wow...cheesy...right?):

I also keep a variety of assorted seasonal fruits (I'm loving citrus right now) and veggie snacks, like carrots and grape tomatoes, around the house as well. So there you have it. If you haven't tried out some of these products they are amazing, and a great way to snack.

What a fabulous weekend! I'm posting a little late on this because I flew in from Nashville around midday and have been busy getting ready for my week to start. Whew.

I'm excited to make curry this week because I have never tried that before. I have been craving a chicken and broccoli casserole, but didn't want all of the fat, so I am happy that I stumbled upon this recipe!

Tasty Tuesday: Turkey Burgers

On Sunday I posted my menu for the week along with the recipes from OxygenMag.com. Here is a link to that post and to that recipe.

Turkey Burgers w/ Sweet Potato Chips


What you'll need:
1 lb lean turkey burger
1/4  cup and 4 tbsp salsa
4 whole wheat thin burger buns
4 leaves of romaine lettuce
2 Roma tomatoes
2 small/medium sweet potatoes
1 tsp salt
2 tbsp olive oil

Preheat oven to 350 degrees

Wash and skin sweet potatoes, and cut into thin slices.
Either spray the olive oil or brush it over a pan with a basting brush. Spread the sweet potato slices out over the pan in a single layer and sprinkle with the salt.

Heat a tbsp of olive oil in a skillet or grill pan to medium or medium low heat.
Mix the ground turkey & salsa, and create four burgers of the same size.
Cook them in the grill pan on one side for about 5 minutes (or until you can see that almost half of the burger has cooked).

Check on the sweet potatoes and stir them or flip them around a bit. 

Flip the burgers and cook on the other side for another 5 minutes or until the burgers are completely cooked through.

Take out the chips and serve up the turkey burgers with the romaine lettuce and slices of the Roma tomatoes. Top with a tbsp of salsa. 


And here is the best part--I went back to look at the recipe from Oxygen Magazine to find out the nutritional information:

Weekly Menu {Jan. 9}

Back in September I wrote out a 9 week menu and cooked the majority of the food in advance and froze it to make my life easier. And it totally did. For that season of my life the 9 week menu saved me so much time and energy that I just did not have to invest in menu planning.

With the dawn of 2012 (a shorter commute and an easier semester in grad school), I have decided to change things around a bit and re-prioritize my time. I love to cook healthy fresh meals, and even though that menu was mostly healthy, I actually want to focus this year on cooking with fewer carbohydrates and eating more lean proteins. To cut back on carbs I knew it was time to say good-bye to Mexican Mondays and Italian Tuesdays.

I have decided to set aside about 20 minutes to plan my meals on Sundays and do my big grocery shopping trip then. My menu will plan for meals from Sunday to Sunday so that I won't have to brave the stores on Friday or Saturday to get food for the weekend. The 9 week plan was great, and I thought not planning the weekends ahead would give me more flexibility, and it did, but the Friday night / Saturday morning grocery trips to get food for Sat/Sun were less than enjoyable. I'm not sure that there is one perfect way to plan for eating healthy, but I think this change will be a good one for 2012.

So here it is:

Weekly Menu {Jan. 9 - 15}
This week will be a little tricky for us because I will be out of town celebrating my baby sister's July nuptials, so I have planned a pretty easy meal for Forrest to get him through Fri, Sat & Sun nights.

Breakfast Menu:
Mini breakfast quiches w/ Spinach, tomato and mushrooms (no cheese)
1/2 grapefruit

Lunch Menu:
Spinach salad w/ Baked Chicken, Cucumbers, carrots & tomatoes
1 Clementine

Snacks:
(am) Greek yogurt
(pm) Craisin & Nut trail mix (mix of raw almonds and cashews)

Saturday & Sunday: Spaghetti w/ Meat Sauce & Steamed Veggies
(no recipe included here...just cook whole wheat spaghetti according to box directions, cook meat in medium skillet until browned then stir in spaghetti sauce...serve with microwave steamed veggies)

Grocery List
8 - 10 boneless skinless chicken breasts
2 14 oz cans crushed tomatoes (if you can find fire roasted crushed get 1 can of those)
Fresh spinach (10 oz for florentine, about 8 oz for quiches and the rest for salads during the week)
Grape or cherry tomatoes
1 bunch fresh parsely
1 bunch celery
Garlic
2 lbs lean ground turkey
1 can black beans
1 can fire roasted diced tomatoes
Thin Whole Wheat Burger Buns
Yoplait Greek Yogurt (I found coconut--yum)
Clementines
1 package whole wheat spaghetti
1 can spaghetti sauce
Romaine lettuce
Tomatoes
1 bag baby carrots

You can check the recipes and decide what else you might need to get. I had some things around the kitchen like the brown rice to serve with the Chicken Florentine and the sweet potatoes.

My goal for this week is to stick to the menu and eat only the snacks I allow myself each day.

Chicken Lettuce Wraps

So the past few months have been a little crazy. And I have been using that as an excuse to eat pretty much anything I want...whenever I want. Although the scale doesn't reflect this (thank goodness) the softness in my arms, legs and belly do show all the cookies, cupcakes, and Lil Debbies I have been enjoying.



I really love working out and eating clean, but when I moved I wasn't able to get a fitness class on the schedule at the gym where I was hired as an instructor, so I went from teaching 3 or 4 classes a week to ZERO. It has taken me until now to realize that I just can't eat what I used to because no matter how hard I work in the classes I take or lifting with Forrest, I don't burn as many calories as when I teach. When I teach I can't take the lower options, and I have to push through to inspire my participants. Research has shown (I don't remember where I read this) that participants on average will do 70% of what the instructor does...so I always try to do 110% that way they actually end up doing closer to 80% of what is expected from the choreography! Also when I am teaching I am hyper aware of how my body appears to my participants so I usually eat cleaner to maintain a leaner physique. Without that motivation, I kind of loosened up about my diet..which doesn't pair well with working out less.

Anyhow, with the arrival of 2012, and three weddings to attend this year (2 of which I will be a bridesmaid) I decided to resolve myself to cooking cleaner meals for Forrest and me. I am not sure exactly what this looks like, but I am thinking mostly lean meats, veggies and fruit with a few complex carbs thrown in here or there.

Yesterday I jump started the year with some BODYSTEP in the morning and Forrest and I grabbed an evening lift when he got home from work (we actually did different work outs, but checked in on each other here or there to see how it was going).

When we got home I wanted to eat something healthy, and for some odd reason I just had this desire to make lettuce wraps (which actually started while I was grocery shopping at,  Target earlier in the day).

I searched "lettuce wraps" on Pinterest and found several recipes, but I was missing most of the ingredients they required, so I decided to just come up with something on my own...and they were amazing!!!


Chicken Lettuce Wraps
1 lb ground chicken
2 carrots, chopped
3 to 4 celery sticks (with leaves), chopped
1 medium onion, chopped
2 cloves garlic chopped
1/2 tsp ground ginger
1/2 tsp cracked red pepper
1/2 tsp cracked black pepper
1 tbsp peanut butter
1/4 cup Trader Joe's Island Soyaki Sauce
1/4 cup pistachios
1 Romain heart
2 tbsp olive oil


Heat the olive oil in a large skillet on medium heat. Add in the onion, garlic, celery and carrots and cook for 2 to 3 minutes. Add in the ground chicken and cook until chicken is white (and completely cooked). Add in the ginger, cracked red pepper and black pepper and cook 2 more minutes until veggies are tender. Stir in the peanut butter, Soyaki Sauce and pistachios and cook for another minute. Remove from heat.

Cut off the end of the romaine hearts, rinse and pat them dry. Place the lettuce on the plate first, and then pile on the chicken mixture. 


Forrest was really skeptical because he had never eaten lettuce wraps before, but he told me during dinner that he was impressed that I could just throw something like that together without a recipe and get such great flavor.

Winter Dinner for 2 or 4

I love a meal that requires about 20 minutes of prep and one to two hours of baking. I can spend some time getting the meal ready, but then I can sit back and relax while the oven does the work. As much as I enjoy making multi-ingredient, labor-intensive meals, the precious time I savor doing something besides sweating over the stove is something no fancy meal can replace. One of my favorite prep-and-bake meals is my famous Roast Chicken and Veggies.


Okay it isn't famous. It isn't even remotely well-known. In fact, I think I've only ever made it for Forrest. But it is a star in my recipe book. I turn to this meal frequently in the winter to get a healthy well-rounded plate using fresh ingredients--and as it fills the house with the delicious aroma of fall veggies, lemon and rosemary, I can sit back and focus on a new favorite past-time, crafting.

There are a few other things that make this meal really amazing.
1) It is really easy.
2) It is really cheap.
3) It is really delicious.



Ingredients

1 whole-roaster chicken
4 red potatoes
3 small sweet potatoes
3 medium carrots
1 large onion
1 lemon
2 sprigs rosemary
2 cloves garlic (not pictured) 


Cut up the the veggie into large chunks



Drizzle some olive oil over them and toss them with salt and pepper. In a deep 9 x 13 pan, drizzle a little bit of olive oil and place the two 2 cloves of garlic in the center (I used the side of my knife to crush it just a bit). Strategically place the veggies so that they make a little nest to put the chicken in. 



You will need to remove the gizzard and rinse the chicken and the cavity. Pat it dry with a paper towel. 


Drizzle the chicken with olive oil, and shake on some salt and pepper. Rub the olive oil and S&P over the skin and cavity of the chicken. Stuff the lemon and rosemary inside the cavity. Tie up the legs and place it over the veggies in the pan. Tuck the wings back. You have to kind of bend them back behind and hook them so they don't move.


 Bake at 425 for about 1.5 to 2 hrs. You should be able to stick your knife into the thigh and the juices should run clear. I didn't get a picture of the final roast because I always cut deeper into the thigh to make sure no blood runs. The first time I did this recipe there was just a little bit of blood in the thigh and it made me nervous.

Then, remove the chicken from the pan, cut the twine and remove the lemon and rosemary. Save one half of the lemon. Scoop out the veggies and leave the juices in the pan. Squeeze the lemon into the juices in the pan and stir them up. Strain the juices and set aside. 

Slice the breast and place slices on a plate next to the veggies. Stir up the juices and pour some over the sliced chicken. Serve with a green veggie like green beans. 



The chicken is super juicy and basically melts in your mouth. The veggies have a great flavor from cooking in the pan with the chicken and lemon juices. You will want to make this over and over again!
